You need a camera with a powerful telephoto lens like a Nikon P900/P1000. So many people have done this over the past 10 years you can save yourself the effort unless you think they're all liars. Taboo Conspiracy does the simplest tests with lasers around lakes in Utah. I think his latest test picked up a laser about 17 miles away that was two feet off the ground that should have been hidden by almost 200 feet of curvature. He's done dozens of these experiments as have hundreds of other people.
But if you REALLY wanted to do this yourself you'll need the camera at a minimum. You could also do this with a GPS-equipped boat on the ocean. The only difficulty with this method is that waves can cause you a lot of problems and block objects in the distance as well as humidity, condensation, etc. Larger lakes on calm days are easier to test with.

Not only does it rise in the East, it does so year round, everywhere on Earth (somewhat North East or South East depending on which hemisphere you live on). The only way that could work on a flat Earth is if the world looked like the map you see in a school class room: north pole on top, south pole at the bottom, random cut-off somewhere in the Pacific, with the sun moving around the middle, which is obviously retarded. You would not be able to start from, say, New York and travel in one direction until you returned to the same place. You would not be able to cross either pole. You would have to have an edge of the world somewhere in the ocean (or on land), and at each pole, which is retarded.
If one of the poles was actually the circumference, and the other the center of a disc (which would allow us to cross the Pacific and go over at least one pole), then the sun would come up due north for some, due south for others, and every direction in between for everyone else. And that would change as the orbit of the sun rotated around the disc such that everyone would, at some point every year, see the sun rise due North and due South. But at least you would get seasons, except there would be eight of them as the places near the rising and setting sun would get summer while the places furthest would get winter. One full cycle (or year) would have two summers, two winters etc., one where the sun rises due North, one where the sun rises due South.
Oh, and everyone would experience the sunrise at the exact same time, so no time zones (unless light physics are a conspiracy theory as well).
If the sun's orbit stayed constant, you would have a permanent hot zone along it's route and permanent winter elsewhere, no change in seasons.
None of this requires any math or physics. You can replicate it with a frisbee and a tennis ball.
