Dishonored 1 and 2 were amazing. I'd say the old Thief games but they're all very old and clunky after so long, and the last one for ps4/Xbox sucked. Still, Dishonored is very inspired by those (even hired the same voice actor from the Thief series to play the main).
The Batman Arkham series had some fun stealth sections, and some less fun ones. The games aren't strictly stealth though.
It's possible to play the later Far Cry games with a stealth build, though the last few entries of the series were shit. 4 was my favorite and the stealth felt good in that one.
The more recent Tomb Raider reboot series had some fun stealthy bits with the bow and ambush reliant sections. Ghost of Tsushima and Horizon Zero Dawn were similar.
