Because "Aether" was the original "dark matter"; it was a stop gap for something people could observe but didn't yet understand .
Once we understood that the Earth moves and isn't the center of the universe, Aether didn't make sense so we got rid of it.

"Science" is blind adherence to authority, whether it's NASA or your chosen youtuber.
Science is a tool for you to use. You can get your own answers if you know what you're doing. Fundamentally, it means "the world operates on consistent, logical principals which all work together" and you can determine these principals by testing them.
If authority is truth then adherence is a good thing. Bad religion is blindly following false teachings. Bad science is also.
There are limitations to science because it describes a finite (limited) material world.
Knowing what those limitations are and why is the key to understanding science instead of fearing and hating it. I consider it a 'left-handed' knowledge and can be useful even though I'm naturally right-handed. To 'balance' the two forms of knowledge is key.
How old is this battle? Science and religion come from the same source.

Aether coudn't be in periodic table, just because Mendeleev discovered a today well-known pattern in "atomic and chemical properties of elements". Aether was never studied on the atomic and chemical properties.
Mendeleev wrote a big article about aether only in 1905, where he tried to find its place in periodic table for the first time, in response to multiple questions about aether place from other scientists, but went to conclusion that it is out of its scope, until aether atomic and chemical properties will be discovered and studied. He even tried to estimate aether properties it should have to fit into the table, and estimated aether "atom"(particle) mass as 9.6e-7 to 5.3e-11 atomic mass units ( 0.9Kev - 0.05 eV) constantly moving with a speed of 2250 km/s. This particles does not interact with matter or do that very rare. For me, this looks more like some low-energy neutrinos - light neutral leptons that rarely interact with usual matter. Who knows, may be there could be kind of matter (gas/liquid/solid) made from neutrinos created in quantities allowing studying physical and chemical properties of this substance, and only then we will be able to talk about placing "zero" element in periodic table, Pretty interesting task and research, but nobody tried to do that yet. At least I don't know about such attempts among existing researches on creating exotic matters of different kind.

Mendeleev wrote an article on aether only in 1905, and didn't find a place for it in his table, because aether didn't have known physical and chemical properties at the time. Since scientists who was very interested in aether theory want to have aether as element, they tried to place it in a table of elements, so there could be some third-party unofficial periodic tables printed with aether in it somewhere, but they was just counterfeits of original one.

Some older versions of the periodic table, like one published by Mendeleev in 1904, may have included space for a potential element "X" (Newtonium) to represent ether. However, this was a placeholder based on the belief in ether, not actual evidence of its existence.
I posted older versions of the periodic table. One is directly from Mendeleev handwritten drafts. There was no any periodic table older. There is no any aether in it.
Mendeleev published an article in 1905, with a modified table where he marked a place for two hypotetical elements "x" and "y" he discussed in article and tried to estimate their properties. He never assumed this table as a "correct" one or intended for teaching or whatever.
(Notice that nobody from those obsessed with aether posts ever discuss that second element - coronium. How is that? It is as important as aether element named "newtonium" by Mendeleev, and if coronium does not exist, then there is no place for newtonium)

Aether isn't an element, but was considered the medium in which elements exist, as we do now with the word 'space', so it was removed. Space as empty vacuum or 'nothing' as opposed to aether as field of potential for those elements.
One is more accurate than the other. Space loses the debate when discussed by higher intellects with an accurate understanding of the historic debate coupled with modern discoveries.
