Asking when the first gospel was formally written down is a difficult question. We can look at the earliest manuscripts we have, and historians can use deduction to figure out the earliest manuscripts others had. Most scholars say the first century.

The Catholic Church added books to their canon AFTER the reformation began. They were long considered important writings containing some history but NOT INSPIRED. Rome deciding later on that they are inspired doesn't make them so.

Jerome did not believe the Apocrypha were inspired. He agreed that the Jewish people in Israel never treated them as Scripture. He acknowledged they had not changed that position.
