There are civilian experiments which rely on equipment left on the Moon. You can be pretty confident we actually went there and left shit behind. In the case of Apollo; literally, there are bags of shit on the moon.
With the LRO sending back photos of the rover, lander, etc., it becomes increasingly difficult to deny the moon landing.
