I saw a great bug out bag list here, or TGA, and I will be building a getaway bag for a little while, and it reminded me ... Where is the best place to buy high quality, non gmo, not monsanto fucked with, natural seeds for use, and for storage? One thing i wish i had invested more time into doing through my life, is spending time with plants.

It's really not. The equipment needed to set up a little personal indoor grow is slightly expensive, and it'll probably take a bit of research and a few cycles of trial and error before you're harvesting dank, but that little investment of time/energy/money will make up for itself in the long run. Everyone should grow their own weed. It'll be a good skill to have for when we eventually descend into a Mad Max type dystopian hellscape.
Yes, it isn’t easy. I used to grow when I lived in a legal state but now I just have a plug that sells home-grown stuff.

There are some great books out there that will teach you what you need to know. Sometimes it is just easier to find a reliable seller though.
I was originally a genetics major and I have a master's in chemistry, so I think if I put some effort in, it'd be a snap. Would need space and funding though.

If you have a local farmers market or organic farm, you can save seeds pretty easily from tomatoes and peppers. Some things can cross pollinate and not breed true (most squashes and melons). But you can try.
Potatoes and onions can sprout and you can plant those and save the seeds. A planted potato is a clone of the parent and will grow more tubers, but they flower and produce berries that are very poisonous, but contain seeds you can plant. Most potatoes are grown from clones as tubers or seed potatoes, but you can also plant potato seeds.
You can forage some local plants for seeds: wild onion/garlic onion is a good one. Ask gardening friends if they can divide some of their plant to you. Walking onions, raspberry/blackberry, rhubarb, horseradish… they all spread like crazy. And herbs can all be divided or propagated from cuttings if you use rooting hormone.
I highly recommended the book seed to seed if you are serious about saving seeds.

Save your own. Next time you buy vegetables take some of the seeds put them in a jar, add a tiny bit of water, let them sit for 2-3 days at room temp. When you see mold on the surface of the water, rinse and dry the seeds. It will remove the gelatinous outer cover and make them sprout easier. Store in cool dry place.
You do it while they are already wet from whatever fruit or vegetable you got them from. It helps remove the outer layer on the seeds like tomatoes, if you don't do it it's harder for the seeds to sprout.
Also family farms that haven’t yet used gmo. Once they use gmo they can never really go back legally the way the contracts are written, very difficult.
