Of the several cans I opened and ate, I only through a couple of them out because they did not look quite right when I opened them.

If you want to stock up on food , whole grain flour(s), unrefined sugar, baking powder, dried rice and beans, canned meats, herbs spices pepper and pink salt, nutritional yeast, raw vinegar, dry milk makes a good foundation.
Sugar lasts forever with almost no preservation effort. Combine with vitamins and you have what you need for months. Eventually you’ll need fats too for which I think coconut oil lasts a long time.
Invest in canning equipment. Jars, lids, rings, canner(hot water bath does most things, need a pressure canner for meats and low acid veggies), tongs, and some canning books for recipes. Canned potatoes, beats, pickles, carrots, relish, salsa, peaches, apple sauce, apple pie filling(great for pies or just heat it up and eat it on ice cream), rhubarb, chutney, saskatoons and tomatoes so far. They’ll keep for 2 years, and with a garden each year you replenish as you go. The jars are an investment, new lids you need new ones all the time or else have to use the old glass lids and rubber rings. You’ll also need coarse salt, pickling vinegar, sugar and lots of potable water.
You can also make and can beef stew and chilli with a pressure canner, lots of videos on YouTube for recipes and tutorials.
If you get canned fruit, it may not store well longterm. Enzymes continue to degrade it. Dried fruit will keep much longer but of course should be stored oxygen-free.
Really you will be best served if you can keep a garden to get fresh veg / herbs / fruit.
I mean just look at the exp date, and expect it to be good a decent bit past that. I'm pretty well stocked on chili, soup, pastas, canned tuna/chicken, some canned fruits, rice/beans, protein bars, and water. Almost all of it has a printed exp date of about 3yrs out, and will last much longer than that in a pinch.
Dunno tour living situation, but I found it helpful to get a book shelf to organize and store most of it as well.

Step 1) get mylar bags, oxygen absorbers (not desiccants, oxygen absorbers) and an iron
Step 2) buy a lot of dried rice and dried beans
Step3) put rice and beans in mylar bags, throw in an oxygen absorber, push out the air, and seal the bag with the iron
That shit will keep for 30 years. One pound = one day of calories. You get almost everything you need nutritionally from these two things.

My vote is can your own veggies/fruit, gather ammo to hunt, keep seeds and garden, and maybe get a giant 50# bag of rice.
