It uses Bluetooth and wifi, it knows without the camera, it's just accidentally sharing until someone reports it and they do a fix.
I have to read numbers scratched and stamped on metal. Sun is the best for seeing what is there. When smart phones came out I thought i would be smart and take a picture and read it from there. It happened one time, that's it. I couldn't believe it, it was maybe 15 years ago. The phone interpreted it wrong!!!!!! It drew what wasn't there. When the numbers are wrong nothing works. Digital is pre-programmed, it cannot be true.
The ambient light sensor is in the notch, alongside the front-facing camera. If you cover one, you’re going to be covering the other.
There is no camera with a birds eye view, so this should be impossible. The birds eye view isn't possible as there isn't a camera above.

Technically, a program can be made to do this using one single picture. But this being in real time is impossible without a camera above the keyboard.
The camera of the phone is monitoring the camera from an angle, so the backside of the keyboard wouldn't be visible. So there is no way for the same camera to produce this image.
These are the only options.
