They'd have to look at the amino acid sequence. I know at least one study looked at the atomic composition using a type of mass spec. That can provide some insight, but he didn't have the equipment for looking at larger fragments.

I imagine what needs done is some sort of protein digestion followed by a separation technique like electrophoresis. Or perhaps a specialized mass spec machine for larger molecules. The former sounds less expensive.
