Out of curiosity, since you eat grains and occasional vegs, have you looked into oxalates and oxalic acids? I noticed good changes after I cut those out of my diet many years ago, but recognize they affect people differently.
I looked it up and IDK, I can always eat more meat and dairy but I’m mostly trying keep away from snacks, processed food and the such currently.
I raise a lot of my fruits and veg, and know oxalic acid mainly from asparagus and rhubarb. I find both to be delicious, but one makes your pee smell weird and the other is said to have poisonous parts. I don't know, Is oxalic acid high in other vegetables and problematic?
I enjoyed both too but rarely eat them anymore. Foods high in oxalates are fairly random, spinach and chard being some of the highest, avocados have some. You can find extensive lists online fairly easily.
People with kidney, inflammation and/or autoimmune problems tend to have more problems from oxalates, but they can affect other body parts and functions.
Sally Norton has extensive research on the subject, and YT has some good videos too.
