There is no mistery why that stations placed in populated areas - here you could find decent internet connection to beam it up. Users don't need just connection to satellite, users need internet. Where satellite could get it? Only from that ground stations.
They are located in places where Musk make a deal to place a hub with decent fiber connection. And you don't need large sat dish to talk to LEO satellite. Starlink sateliites are LEO, just few hundred miles away, not thousands like geostationary ones.
