They aren't new...it's like a common thing you go through...you need the proper enzymes and bacteria in order to break down raw meat.... additionally, if you don't have the any fatty cuts, you risk too much protein and that will kill your kidneys and damage your liver.
The 'denaturing' does occur when you cook...and make tartar as well....and almost all food which is 'raw' (like sushi etc) tends to have cultural modes of eating and specific rituals...ie proper preparation, specific condiments that are usually used to kill bacteria....etc....
The cooking process...if done correctly and you don't burn everything, over cook everything, boil a bunch of shit, etc
That is also very healthy and probably less risky than your raw meat diet... additionally I don't think your diet brings many benefits that I cannot achieve with my healthy heat applied diet.....
