Basically our local perception is causing that effect. It's the same with the sun and the moon. The path we view is not their actual path through the sky, just what we are able to see before they vanish over the horizon.
This is one of the most complicated things to resolve because I don't know if the stars are inside or outside the firmament, or how that would effect it. Antarctica is an encircling landmass, some refer to it as the ice wall. Most flat earthers will simply tell you the planets are simply wandering stars as the ancients call them. They are non terrestrial objects. There is no proven consensus on what they are, but they are local, thousands of miles at maximum. The stars and wandering stars, and sun and moon all function like a big celestial clock rotating at different rates. It's beautiful, keeps time, and can be used for navigation.
