They have no control over them really and the only point is to get them to their speed and angle before the next phase. I doubt they make it very far from the base which is one of the reasons they like to shoot off over water....

Separating stages do not produce parabolic burn trails. The rockets are clearly just arcing over and coming back down, then you are shown cartoons or CGI for the rest of the "mission"
