We do see different stars in different seasons, exactly as shown in your diagram. You will not find the constellation Leo in the sky tonight because it's currently behind the sun.
Which is why we have all those spherical starscape maps of the sky. And google sky which I am currently logged into and scanning about. And why the big dipper spins about the north star and is only visible for three short months, at different points all around the Earth, during different season. We all learned about this in grade school. Science!
