What's the point? If you use third-party server for your communications, it is not any different from using whatever BigBrother shit.
I personally don't like Jitsi, since it is very memory and CPU hungry, being written in Java/JS, but I don't see any reasons for discontent. Software and code is fine, it is fault of stupid users who are too lazy to rise their own servers. They are their own betrayers, not Jitsi community.
