You’re perceiving Jews as a monolithic entity which follows the same universal laws when this couldn’t be further from the truth.
Jews are not monolitic at all. Battles for profit are their national sport. But in the rivalry of Jew and goyim, other Jews, even those who yesterday bite each other will always take a side of Jew, independent of truth and justice.
Orthodox Judaism, Conservative Judaism, Reform Judaism, etc. all offer different perspectives on what constitutes Jewishness.
Some could see Jewishness wider than other. But all of them will agree that a person is a Jew, fully one of them, if his mother is a Jew.
Identity is much more fluid and malleable than you’re allowing
Again, you can dream any identity you want, but that does not make your dream real, if you can't control that identity, regardless of reason, than it is not you who could really declare it. Etnicity is in control of other people of that etnicity, you can't control it, just like you can't control what sex you are, because you can't change XY to XX or vice versa on your desire.
