Olive oil is very good for you period. Its one of the good fats, so I wouldnt feel guilty about using it.
I use it instead of vegetable oil for everything(Stay away from the hydrogenated oils, your body doesnt like em). They say you cant, but I just cook on a little lower heat so it doesnt burn.
I also use olive oil in place of butter when it comes to frying. Butter isnt considered a healthy fat, but I do consume butter over again hydrogenated oils, like margarine.
You can use it for about everything lol.
For meatloaf I will fry red/green/yellow peppers first in a tablespoon or two of olive oil, then onions after they soften, then throw in garlic at the end because its very easy to burn. Set it aside let it cool and mix it in with your meatloaf/meatball mixture. The vegetables make it very very tasty.
If youve never made pizza before, its worth trying. Super simple to do (hardest part is forming the dough) and again I use olive oil, while most pizza places uses vegetable/olive oil mix to save costs. You can also take the extra step of infusing the oil with garlic before making your dough, I dont know how much of the health benefits you would get from just infusion though. But by making your own dough and pizzas it will be for sure a little healthier.
Alot of chicken marinades are made with olive oil and garlic. Many people like using a garlic press to turn it into a paste as its easier to mix into liquids this way.
Really you can use it in anything you wanted to. Pairs great with chicken/pork and earthy vegetables like potatoes, wild rice, and lentils.
