Yes but again unreliable on a nuke. They can divert missiles likewise into missing targets by jamming seen it a few times of tubes on the battlefield. But a nuke is gonna fallout, impacting far more than the target. There are also plasma countermeasures and likewise measures on let's suggest ships and planes or mobile units.

Yes there are also microwave, laser, railgun, drone deterrence. With laser being the biggest stopping measure currently against hypersonic. Many Nato ships, like the newest carriers and strike groups have fit lasers currently. Others experimentally have possibly adopted railguns and microwaves. Think stuff like the Iron Dome is also making laser based defenses, as well as the Aegis.

The problem is there isn't much defense, because you have to detect any incoming, and at speeds of hypersonic, it's a lot more luck. Some cruise missiles are getting partially shot down and many former ballistics by increasing defenses and countermeasures, but a hypersonic is quite undetected. It doesn't leave orbit often detected by satellite, and ground based radar, it glides in an atmospheric blind spot, reaching velocity. Where systems might detect it closer to impact scrambling into defenses, but former missile to missile systems are often way to slow for them. Hence quicker lasers being deployed. And it's not going to jam through active locks. They have often been calibrated into smart based targeting systems or likewise.
