Kosher food is because in ancient times before germ theory, modern explanations for allergies, and sanitation they noticed that people would come down with physical ailments, sickness and death more often after eating certain things.
Maybe it had some truth in it in ancient times, I am not going to get into details, but many rules are outright ludicrous and I am not just talking kosher.
A lot of Rabbis themselves state that these laws and traditions are what sets them apart. This was the "wisdom" in increasing them overtime. So that a jew becomes a slave to his Rabbi, for doing anything, he needs to consult his Rabbi first to see if it is permitted or not. This resulted in giving the Rabbi overarching authorities and helped solidify their group. An average jew had no option either to fully submit to the Rabbis and their law or completely leave the religion and all the community he belonged to.
