What's up with the coloring and the weird Rod of Ascelpius on the UN logo?
Can you scan the QR code in the picture? (I ain't trying)
I also wondered about the EU stars, and I do wonder if they chose 12 for the tribes of Israel (ya know, because they seem a bit Zionist). Apparently the 12 stars represent unity of the European people, and 12 is "the symbol of perfection and entirety" (since when?).
But let's see...the dude who designed the EU logo? Paul M. Levy. Color me surprised.
"'Twas brillig" is a quote from Lewis Carroll's Through the Looking-Glass, and is found in the internal poem Jabberwocky. "Brillig" is explained to Alice by Humpty Dumpty therein as being late afternoon when "broiling" for dinner begins. This 28-line poem was made into an entire Criterion Collection movie directed by Terry Gilliam.

It could be the the first stanza of the Jabberwocky poem by Lewis Carroll, infamous author and pedophile.
