This is on windows but you just plug it in and it’ll come up with the normal flash/external drive window that has different options. I believe the selection says “open folder to view files” and then access it as normal.
I don’t use iCloud or anything like that so maybe that factors in somehow
And you absolutely can take pictures off your phone without iTunes. You just plug your phone into the computer and you can access your photos the same as you would when you plug in a regular usb drive.

I read the article that this comes from and the data they use ends in 2018, I think the data started in 2009 if I remember correctly.
