But, why should we care? I mean, why does Iran, as a sovereign nation, deserve nukes, if they're willing to put in the work for them?

Israel wants to destroy the entire Iran so they don't need to play by MAD rules. So in that scenario Iran would make israelis think twice before deploying the Samson Option.
