To start off all the early videos coming out of China of people randomly having seizures and falling over were obviously fake and gay. This happened no where else in the world. It was clearly propaganda for the media.

The testing was bullshit. Many labs were doing up to 40 cycles with the PCR test which Kary Mullis (pcr inventor) said was just nonsense.

I don't know about now but at least during the first year, they had never even isolated the virus. It was just some computer model of a virus.
So what did come out of China? Well in the early days of the pandemic 2 papers came out of Wuhan that basically said how to deal with the virus. And they said essentially the virus is so dangerous that patients must be kept on negative pressure wards or put on ventilators for the protection of the staff. The World Health Organization then pushed out these recommendations to all member countries. This meant throwing out all existing protocols about how to deal with patients with respiratory infections, which I believe probably killed huge numbers of people. I believe the computer models of the virus that showed up on all the bullshit tests most likely originated from China.
TLDR: it was always just flu.
Or "lab leak" was in the initial plan, but it was found out that it is impossible to make barely working virus they created to really leak out. To be able to leak out, virus should work. Since even by most biased papers on covid it is hard to breed it even on special genetically selected cells of monkey kidneys that does not exist in nature that covid virus just could not leak out. So PCR shenanigans on everybody with slightest symptoms of flu was introduced as plan B to create an impression of epidemic. Or poisoning with something PHMG/fosgen/whatever substance in public places to pose effects of poisoning as sympthoms of covid.
A likely answer to this is that it is very hard, if not impossible, to engineer a dangerous virus. All those stories about bioweapons are science fiction and will likely remain fiction. The reason for this is that humans (and all organisms really) are highly robust against challenges that they have faced during their evolutionary history. Viruses (and other pathogens) are one such challenge that has "attacked" humans over and over again, so humans and human populations have very robust defences against these i.e. adaptable and highly varied immune systems that ensure multilayered protection against these viruses. This doesn't mean that you couldn't kill some people with an engineered virus, but that the ability to kill a large number of people and have that virus spread throughout the population doing this is very limited. Especially if people take precautions to bolster their general health (i.e. exercise, well-nourished etc.), which ensures healthy immune systems and protects against infectious diseases in general.
(Humans, of course, are not robust against challenges not faced during their evolutionary history. This is why projectiles and chemical weapons are effective - we have no evolved robust defenses against these, unlike biologicals).
Of course it is hard since nearly nobody want to study what is really encoded in RNA and how it really works. All they know is how aminoacids encoded in RNA codons, and that proteins are made from amino-acids, but that's all. They don't even know for shure what protein exactly they will get from one or another codons sequence if they will get anything at all.
They literally create random viruses, randomly tossing DNA/RNA parts in the hope that next try will give them virus with necessary properties. Probability of making working one is very low. Because you need not only create a working virus, but also it should be not very deadly to be able to spread and harmful enough to cause any sympthoms. It is a very narrow range and probability to occasionally hit that range is extremely low in their try and trial method.
Same with GMO - they just try and trial random pieces without knowing what they really do.
And as you correctly noticed, humans have millenias of training to fight viruses when that "scientists" just for a few decades know that RNA encodes creature.
