But turning it off is the same as blowing it up if they have no plans to supply Europe any more. They already have soldiers, ships, and submarines, along with plenty of munitions. Blowing it up costs them nothing. Remember, they weren't initially planning to cut off Europe until all the embargoes started. They were hoping Europe would pay in Rubles. And as we saw, Russia quickly found it could make more money without Europe.

Wouldn't they supply Europe after the war or at least keep that option on the table for negotiations?
Russia doesn't care about Europe. In fact, they want the EU to fail. Now that they're making even more money, even less reason to care.
