That flight is possible on the flat earth model as the north pole is the center of the known world. A similar flight over the south pole to get across the world is impossible though. Look up flights from Perth to somewhere in South America like Buenos Aires (the shortest distance between those 2 cities is directly over the middle of Antarctica on a globe). There are no flights that will ever circumnavigate you over Antarctica cause that is impossible.

Wouldn't this be a straight line on a flat earth? Like the ww2 air map of the world... I've noticed the curves of flight paths are actually straight shots when using maps with the north pole at the center and the south pole surrounding all the continents and oceans.

Pilots literally have to calculate their fuel amounts to account for the curvature of the earth. If they calculated them as if the world was flat, that flight from New York to London would land in the ocean. Case closed.
