Make deals with local farmers while you can. You want to pay for your beef while it is still living, and have the farmer bring the cow to a local processor. This is a common CSA meat model.
Federal processors are what make store meats so expensive. These processors keep taking a larger cut, while they continue to pay the farmer less, and the retailers are applying their same markups as always. There're only 4 federal meat processors, and it's about to get worse when Amazon(whole foods) gets in there.
Most states allow for farmers to process their own poultry. Buy straight from them.
