Phones don't have direct magnetism sensors. I cannot think of any reliable way for a phone to process RF to detect external magnetic fields. GPS has nothing to do with it either.
So I think, false alarm. But yes the vaxes have materials of undisclosed purpose, and that is alarming.

On accelerometers though I have to say that doesn't match what I see working in the electronics indiustry. Chip accelerometers these days use MEMS; those are semiconductors basically with tiny tuning forks made from silicon. They are non-magnetic. They are used in many products for example, drones use them too. Their information can be combined with separate Hall effect magnetic sensors.
The picture doesn't show "the phone detecting vaccination". They're just trying to stick the phones on like the coins. I guess the magnetic thing became viral in Mexico after it was tested on a popular daytime show.
