That is weird. Any plane he's on should be AF1. It's not the name of a specific plane like "titanic" or something, it's the designation for official governmental presidential transport

Perhaps the tracking website doesn't have the ability to change designations on the fly. How does that website know what plane does or does not fly the president?

Designation happens preflight. Presidents don't jump from plane to plane. They were never designated AF1.

when trump flew to mar a lago on 20th jan. the plane also did not have AF1 callsign. only N/A was shown for the callsign

FAA Air Traffic Control will use the AF1/AF2 call sign when talking to the pilot if POTUS/VPOTUS on board, no matter what aircraft type. From the ATC Handbook...

"When in radio communications with “Air Force One” or “Air Force Two,” state only the call sign “Air Force One/Two” regardless of the type aircraft."

Flight trackers will not have the AF1 designation but just the aircraft registration ex, 82-8000

I have seen the AF1 call sign displayed, but only once, and I've only been planefagging for a few months.
