This is actually not true. I make homemade beef jerky on a pellet smoker, and it's only fresh for a few days in room temp. I don't use preservatives. It will last in the fridge for a couple weeks. But freezing it, keeps for months.
Sorry, I agree that JE was a baby eating loon, but this isn't the argument to hang your hat on
