It’s the same as with the hand emojis. Type hand, thumbs up, or wave, and by default it will be the yellow one (which was the original version before they added the skin tones). Once you hold and select the emoji, you can change the skin tone, and then your iPhone will remember that option for the future.
The only reason the black emoji comes up first is if the user used the black emoji last.
