China doesn’t own “most the crypto”. They have most of the Bitcoin mining power, but that doesn’t mean they own all of it. The majority of Bitcoin was mined before China dominated Bitcoin mining.
There are other cryptos that are mined by amateurs, and aren’t primarily mined in China.
There are cryptos that aren’t mined at all and use proof of stake.
There are private cryptocurrencies.
