WTH! You're freaking right, why have I literally never tried this. I just searched for "dog" and google says there is "About 3,710,000,000 results". I got to page 30 and that was the end... It should take me the rest of my life to get through all the results but it stops at page 30!?! So I'm guessing the "pages" of results is actually a complete fabrication and instead the "page" represents some sort of relevancy indexing where it's actually just running the same search but with a wider net of perceived relevancy.

The info is correct. Google algorithm is not a 1 to 1 result. It's actually how they order the page. It's based on links, mentions, relevance.
