Tunnels are everywhere under Jerusalem and in most ancient cities. Most go back for thousands of years but mainly to around the Knight's Templar and largely the Roman's and Egyptians. Sometimes they buried the dead under their cities, or needed ground water sources and reservoirs, many are also old sewers and former mining excavation for stone, and foundations, but they have also been used as places to escape during seiges and get around a city in seige. Templars massively tunnelled in many other fortifications and places in the region during the crusades elaborately. In Jerusalem it was rumored the Templars were looking for artifacts and biblical proof.

Not sure about the content of the OP's video. Except it is well documented that there are tunnels in Jerusalem. I suppose these are largely closed to the general public.
