I like to stay old-school on a lot of things, and during my travels upon the noosphere discovered a little notepad that's quite fit for the job;
(For Windows) MemPad is less than 250kb, and is mix between a file explorer and Notepad. (In no way affiliated. This is just a recommendation). It's portable as well (Extract and run - no install)

Nice, you should checkout Obsidian.md if you like the plaintext stuff. You can backlink notes, so you can go through them like a wiki. There’s a graph feature that links everything like how your mind does, with nodes and connecting points. Also it’s pretty.
