Plasma and gas is as different as solid and liquid or liquid and gas.

In plasma, unlike in gas, electrons are completely separated from nuclei. It is unconnected mix of electrons and naked nuclei, while gas is a mix of atoms or molecules keeping their electrons with them. It is fundamental difference that makes gas and plasma to have different fundamental properties. F.e. gasses are good isolators, while plasma is a conductor. Gases consist from electrically neutral molecules, while plasma from separate charged electrons and nuclei. There can't be molecules in plasma, so it interacts with other substances differently than gas made from same substance. And so on.
