Essentially what happens is they enable the meat cells to grow indefinitely by modding them with genes that cancer tumors have, otherwise they'd naturally stop growing at some point. The result is a giant meat tumor, which is what you're eating.

Makes perfect sense. The only way to dupe cells like that sounds like cancer tumors. I can't imagine anyone being willing to eat that stuff.
