except earth isn't a perfect sphere, is it? some parts are flatter than others. obviously.
and also light bends with the curvature of the earth a bit...

correct. official Science™ assumes a perfect sphere.
for example, mountains are not flat.
The under lying earth beneath the mtn is supposed to still be curving.
At 15 miles a 10 story building is supposed to be hidden by the curve. With or without binoculars.
