But aren't stars, fixed, the North star will always be North, etc.

No where near to being out in the open night sky, seeing the cosmos. It's becoming a thing of the past today. Europe has largely become a light polluting shithole. Rurally still get a glimpse, when it's clear, but it ain't somewhere where there's much better observation.

No. But you can look at satellites, pin pointing hubble you'd have to be in an observatory knowing its exact location.
