I'm pretty sure the idea of this is to bankrupt jones and wipe out infowars. Tonnes of people said it was staged / fake etc. There were dozens of documentaries about it. Why did no one chase them?

If you believe the court jones is worth like 270 million. The judge did some things a normal judge wouldn't do like a default judgement it leaves this open for appeal if Jones want to he could fight back on appeal.
