You can't transfer pics / vid directly from an iphone to pc without 3rd party software (or itunes), but you can turn off icloud backup. I use a little lightweight freeware program called Mobimover to transfer all my vids
You definitely can, I honestly didn’t know you could use iTunes to get photos off your phone because I’ve never used it before. I’ve owned an iPhone for maybe 10 years.
This is on windows but you just plug it in and it’ll come up with the normal flash/external drive window that has different options. I believe the selection says “open folder to view files” and then access it as normal.
I don’t use iCloud or anything like that so maybe that factors in somehow
Damn, til. I've owned different ones for 5+ yrs and every time i've tried going directly into the files to get the vids nothing shows in the folders. Thats why i originally looked for 3rd party software other than itunes.

It’s possible that there’s something in the settings that enables/disables this so if it doesn’t work maybe check there
