We were miseducated.

The primary reason for both of those phenomena is not the shape of the earth, but the density gradient in our air.

I recommend watching, or better yet - doing, some demonstrations on light/lasers into density gradients to understand better the path the light takes from the distant sources (as well as why it stops reaching you, and where it goes).
