Flat earth is also a theory. The problem with your theory is that there are no observations that make sense.
For example; when a ship disappears over the horizon and I explain because the earth is round to a 3-year-old it makes sense to them. If I said, the ship disappears because the earth is flat, it makes no sense.

A ship dissappear over the horizon until you get a high zoom camera and bring the ship back into view. Then the ship disappear in the haze/mist from water vapour building up over a distance.
