You should look into how aeronautical gyroscopes work. They do not care about whether you spin them, tilt them, rotate them etc. They create their own centrifugal force before the airplane leaves the runway so that they stay true to their orientation no matter what. Gravity has nothing to do with this, a plane can cruise at 13,000 feet, 30,000 feet, 40,000 feet. The angle of the wings will determine which direction the plane will fly, and if the engine does not provide enough force of air over the wings then the plane will stall.
