Has anyone noticed, that the crowd adamantly against GMOs isn't not vocal against the COVID vaccines, which don't just alter the DNA of the food you eat? Or am I just missing it?

Its because those people do not understand what they are talking about.
GMO is a buzzword. Nearly every food on this planet is technically a GMO. Seed selection, where you keep the seeds of heartier stock, is genetically modifying the organism. It is unnatural genetic selection.
Genetically engineered organisms are a more specific class of GMO and this is what most people are talking about when they imply GMO.
This is engineering the organism on a genetic level to produce the desired results.
This is literally what happens with the sars-covid-2 vaccine. It takes an engineered protein, basically a blueprint, and injects it into your body. Your body takes this blueprint into it's "genetic factory" and it starts to produce the viral proteins supposedly found on the outside of sars-covid-2. This in turn should theoretically trigger your bodies immune system to build a response to those proteins found on the outside of the virus and in theory if the virus and proteins were to enter the body the immune system should already know how to fight against them from the vaccine and should respond properly.
We know this isn't the case though because they fully admit that the vaccine doesn't give you immunity and if it doesn't give you immunity it isn't working like it theoretically should. Or at least how they are telling the public it should work theoretically.
TL;DR GMOs are not bad GEOs are bad, the sars2 vaccine is a GEO. Most people don't understand what a GMO or GEO is.
Thanks for a thoughtful comment. I understand the issue better now. I've never been against GMOs, despite what Nasim Taleb says (he's against them), because I understand like you do what GMOs actually are. I was trying to point out the incongruousness of the situation.
I think my point is valid, that theoretically those against GMOs and using organic produce, should be against the vaccine for the same reasons that they are against GMOs, but I've not seen it in the press, blogosphere, news, or elsewhere.

All the people who complain about GMOs absolutely should be complaining about the vaccine.
They just haven't been told it's a GMO and those people are essentially just sheep, doing as they are told.
